Working in compliment with Executive Chef Boris Campanella’s cuisine, Head Sommelier Xavier Thuizat has reconstituted the hotel's historical wine cellar to now be one of the best places for wine in the capital. In 2023 Xavier was recognised with the Meilleur Ouvrier de France award, in the Sommelier category.
