California-born Chef Scott honed his craft for two decades, including nine years in Japan’s fine dining scene.

After nine years honing his craft in Japan, Chef Scott Yonamine returned to California to open AMA Sushi. He spent two years at Tokyo’s five-star AMAN, and previously trained with Master Chef Hiroyki Kanda in Hakone.

Scott Yonamine

Originally from Ventura County, Chef Scott Yonamine returned to California in 2022 after nine years of living and working in fine dining in Japan. With two decades of experience, he began his career working in various restaurants before following his dream to move overseas to hone his craft. In 2013 Chef Scott moved to Hakone Kanagawa, Japan where he worked alongside Master Chef Hiroyki Kanda, recipient of the Michelin Guide’s Mentor Chef award, in the shadow of Mount Fuji. In 2020 he moved to Tokyo where he spent two years at the five-star AMAN Tokyo, before returning to the states to open AMA Sushi.
