Justin Tan

Chef Tan hails from Zhanjiang, Guangdong province, and brings with him over 30 years of experience and a deep connection to the Michelin Guide. Accomplished in Cantonese cuisine, he combines classic techniques with his own interpretations and artistic touches. His knowledge and skills played a key role in leading his team to be awarded three Michelin stars while he was at its helm as Executive Chef.

Since joining the House of Dynasties, Chef Tan and the team have upheld the restaurant’s philosophy of “Farm to Table”. Using only farm produce from non-polluting and sustainable sources to create stunning signature dishes.

Chef Tan adheres to his vision of creating dishes that are "rough around the edges, yet remarkably approachable, allowing the simplicity of the ingredients to shine through." This distinctive aesthetic, concept of simplicity and zen-like elegance form the elevated culinary art that he performs.
